Cassidy’s cooking: Vegan Microwave Brownie

There are definitely some nights where a cup of tea and a piece of fruit is definitely not going to cut it and the only thing that will do is an entire bag of Oreos and a pint of ice cream. Maybe add in some bulk candy for good measure.

In the face of these binge-eating conundrums, I have an alternative solution. A brownie, that can be made in the microwave, in only a few minutes, with things likely already in the pantry. Covering the chocolate and baked goods and ooey gooey delicious cravings all in one go.

And there is only enough for one serving. So not only is there no sharing, but there is also no leftovers to feel obligated to finish at 2 am. It’s okay, we’ve all been there.

You’ll need:

  • ¼ cup all-purpose flour
  • ¼ cup packed brown sugar
  • 2 tbsp unsweetened cocoa powder
  • pinch salt
  • 2 tbsp vegetable oil
  • 4-5 tbsp non-dairy milk or water
  1. In a heatproof mug or bowl, stir together the dry ingredients until no lumps remain.
  2. Stir in the oil and non-dairy milk and mix until you have a thick batter. Depending on how your mixture comes together you may need four or five tablespoons of liquid.
  3. Microwave on high for 30 second intervals until the brownie reaches your desired consistency, usually about two minutes. As different microwaves cook the batter at different speeds, it’s best to check it often. The brownie is done once the top has hardened and looks more matte, but is still spongey to the touch.
  4. I know it’s easy to just dive in, but the brownie will be burn-the-roof-of-your-mouth-off-hot, so give it a couple minutes before eating. Better yet, scoop some ice cream on top while you wait.
